You don't get much vaporization of volatile chemicals because they are literally burned up by rapid combustion. Wood chunks and splits take longer to heat through and burn.

In the grinder, the black cherry pellets ground up into saw dust, whereas the hickory chips were much harder to grind and turn to splinters. Used whole logs, not pellets, firebox underneath, not at the side, and an 8 gallon water pan. I have searched the Internet looking for a replacement and can't find anything but pellet smokers.
