Depends how you mix your cheeses. Mozza and mild provolone are for that cheese string pull, it's just not a good pizza without that, imho. If you've ever tried an aged provolone you know what a flavour kick it has. 50/50 mild but gooey cheese with a strong flavoured cheese gives you what you'd like in a pizza cheese mix.
