For a whole pork belly, take a leaf out of the Italians’ book: slather the belly with herbs, roll it up and tie it tightly, then roast in a low oven overnight (look for a recipe for porchetta).
Although pork is a lean meat, there may be a slight marbling of fat (especially in traditional ... as you'll see in Mike Robinson's video recipe for Pork escalopes with lemon butter sauce.
If you follow my instructions carefully — read them all before you start the recipe ... way through to the fat. If you do, the salt rub will seep through and make the pork too salty.
