Sauté for two minutes before returning the chicken and sausage into the Dutch oven. Add chicken stock, Peppadews, brine and potatoes. Add remaining 1 tsp. of salt, pepper and Italian seasoning.
Cook, breaking the sausage up into small pieces with a wooden spoon, until the sausage is browned, 6 to 8 minutes. Add the garlic and cook until fragrant, about 2 minutes.
